Weddings can become ULTRA expensive fairly quickly if you aren’t careful. One way to cut wedding cost is to prepare some (or all!) of the food yourself.
If you are at a park or a venue that doesn’t have a required catering contract, you are free to bring h’ordeurves or appetizers without contracting a vendor.
One amazingly flavorful and cost effective sauce is a walnut and spinach pesto. Traditionally, pesto is done with pine nuts and basil, which are both costly options.
Substitute the walnuts for pine nuts, spinach for basil and mozzarella for Parmesan and you are in business for a much lower cost per serving! (Almost 50% less!)

The key to a successful finger food is leaving a lasting, flavorful bite, and pesto certainly does that!
- 1/4 cup Parsley
- 1/4 cup Basil
- 2 cups Spinach
- 1/4 cup Olive Oil
- 1/2 cup Walnuts
- 1/2 cup Mozzarella
- 3 Garlic Cloves
- Lemon Juice
- Salt & Pepper to taste
Mix all in a blender, food processor, Nutribullet
Store in a refrigerator and mix together as needed. Serves 6-8 oz per serving
